I was recently asked about oven canning, if I had any information about it, I had never even heard of it ,so like a good little blogger I went to the National Center For Home Food Preservation to see what they had to say on the subject.
Basically the said "DON'T!"
The National Center For Home Food Preservation says Oven canning is not safe, that it can be dangerous because the temperature will vary according to the accuracy of oven regulators and circulation of heat. Dry heat is very slow in penetrating into jars of food. Also, jars explode easily in the oven.
So there you have it... this isn't a good shortcut, sounds messy and dangerous!
Having said that I will post any more information on the subjust I find because it was requested..... But I posted the warning first.
